Food for Easter Bunnies: Apple Carrot Cake

(yields 1 baking tray)

For the cake:

250g butter

250g brown sugar

peel of 1 orange and 1 lemon

4 eggs

1 pack baking powder

100g almonds (grated)

100g walnuts (grated)

200g peeled carrots

200g peeled apples

1 pack vanilla sugar


a pinch of salt

For the frosting:

150g greek yoghurt

1 dash rum

100g caster sugar


Combine the butter, 2/3 of the sugar salt, vanilla sugar, cinnamon, orange and lemon peel and mix until fluffy. Slowly add the egg yolks and keep on stirring. Beat the egg whites until stiff with the rest of the sugar and fold into the mix.

Sieve flour and baking powder, mix with the walnuts and almonds. Grate the apples and carrots and blend everything well into the butter mix.

Preheat the oven to 150 degrees Celsius. Spead the mix onto a baking tray lined with parchment paper and bake 50 minutes.

Take out the cake, leave to cool.

For the icing, put the yoghurt into a bowl, add the rum and slowly add the caster sugar. Spread on top and store in a cool place to allow the icing to set a little. If it’s too runny for your taste, add an extra bit of caster sugar!

Baby went to Amsterdam…

…and ended up in pouring rain. Mixed with a litte… rain. To be fair, sometimes it was only a drizzle. But seriously, Dutch weather: you need to get you sh#t together, this wasn’t okay.

What was amazingly great, however, was all the wonderful food and coffee to be had in both cities I visited. And the reunions, of course. So great to see all these people again – crack up about the same stuff, sharing inside jokes. It was wonderful, especially after that turbulent exam week.

Is this okay or is it too cheesy?

Here’s a few recommendations:

Hanneke’s Boom

A lovely little place at the harbour and right next to the big library, great music, really chilled vibe, great food. They had lots of beer on tap and bottled as well as cider and great fresh mint tea (to warm up after getting soaked in the rain once more).


This place is tiny, it’s a bit dodgy, it’s nothing special by the looks of it – but they do the most amazing thai food for really fair prices. It can get pretty crowded in there, but tourists are a rare sight.

One gracht of many. And endless boats. It was wonderful.



Best. Apple. Pie. Ever.

No, seriously, it’s amazing. And they do wonderful coffee, the service is SO friendly and it’s a perfect place to feel like a cat next to the fireplace: happy, sleepy and about to purr.


Vinnie’s Deli

I absolutely love the style of this place – wooden floors, the ingredients neatly stacked up above the counter, delicious sandwiches, great mint tea, wonderful coffee, free wifi – all served with a smile. Pretty much everything you could ask for. Oh, and super comfortable couches.


Cafe Brecht

It’s hipster, but it is cool after all. Great place for a few drinks at night, huge beer selection.



Part of the University of Amsterdam, this coffee meets bar place is buzzing with students (haha, captain obvious) and it’s a really nice place to kick back and enjoy a beer or some coffee. There’s comfy couches, books and sometimes performances going on.

Ohh the weather outside is frightning

Since I didn’t actually get a decent Christmas break for a variety of reasons, I might have been the only person around to actually enjoy heaps of snow and Christmas-ness for Easter the past weekend.

What all this cozying up meant amongst other things was this:

5 minute pear-dark-chocolate-brownies!!


1/4 cup flour

1/4 cup sugar

3-4 tbs unsweetened cocoa

2 tbs olive oil

3 tbs water

1/4 diced pear

1-2 ribs diced dark chocolate

optional: cinnamon, coconut liquor, ice cream


Mix all ingredients together in a mug until smooth, place it in the microwave for 1:50mins (600 watts), add the ice cream and enjoy. Also: your whole flat will smell like chocolate and make you happy.
